Eat In. Breakfast hash.

Similar to the Italian breakfast we've posted about, this recipe really is what you make of it.

You can take a variety of vegetables, I often use asparagus, bell pepper, onions, mushrooms, and always tomato, saute in a pan with shredded potatoes or a hash brown mix and add a whipped egg. That's it. Veggie sausage or regular sausage works well with this too, but the two basic ingredients to this dish are simply potatoes and eggs. You can choose any other ingredient you want to add to it. Come to think of it, I bet spinach would be really nice in this and very healthy.

If you were to add vegetables to get in your morning greens, always saute the hardest to cook veggies first and gradually add others. A dash of salt will help your greens relax. Sausage, if it is raw meat, should probably be first, but veggie sausage can be tossed in the pan later since it is only getting warmed up.

I recently made this for my roommate and she was pleasantly surprised. It's healthy, filling, and satisfying. Pair it with a side of toast and you'll get in some nutritious grainy, fibery goodness: perfect for a morning before Saturday adventures!
